Urban-Rustic CHARCUT Roast House Offers Downtown Calgary Diners Exceptional Value

the sleek, new, Le Germain development on Centre Street, CHARCUT Roast House is now open for dining and drinks daily. Owned and operated by Calgary Chefs Connie DeSousa and John Jackson, Service Director Jean Francois Beeroo and Managing Director Carrie Jackson, CHARCUT Roast House is the team's foray independent venture. With combined experience at famed destination restaurants from New York and San Francisco to Dubai and Bora Bora, the young restaurateurs are glad to be home in Calgary.

CHARCUT works with honest, seasonal ingredients from small, local artisan farms and ranches to create flavourful, unpretentious dishes from scratch. Diners will delight in the inaugural menu, which features a selection of house-made sausage and cured meats, as well as fresh cheeses and 'Table Snacks' like Bone Marrow au Gratin and Slow Roasted Heirloom Beets.

YOUR TABLE IS READY
With 110 seats at CHARCUT, the most popular include:

- the Brazilian wood handcrafted charcuterie eating bar for six where you can watch the skilled chef-owners and their team work with authentic tools of the trade, including a custom-built rotisserie, charbroiler and vintage-style slicer
- the 10-seat reclaimed Douglas fir communal table beside the twin beer and wine cellars and the bar where classic cocktails are handcrafted with organic ingredients and premium, small-production spirits
- the bright lounge-bistro section lit naturally with floor-to-ceiling windows and views to the landmark Calgary Tower and charming Stephen Avenue
- the interior bistro-style banquettes of black suede and leather that anchor the inventive space designed by Lemay Michaud
- the raised semi-private zone where small groups gravitate featuring a peek-a-boo kitchen view and a towering original painting by Corey Linnen of a Holstein dairy cow.

MORE COWBELL AT CHARCUT
With cheery cowbells on the table, massive CHARCUT Share Burgers on the menu and a bar-none craft beer cellar, CHARCUT becomes the perfect downtown venue to watch the Olympics Gold Medal Men’s Hockey Final at 1 p.m., Sunday February 28.

"When Canada takes gold on the podium, all CHARCUT guests in the restaurant at the time will share a major golden moment of their own," says John Jackson, who is preparing a special surprise. Prior to opening, CHARCUT buried a freshly minted, Olympic themed "Lucky Loonie" deep under its ice machine in commemoration of Canada hosting the 2010 Winter Olympics, dedicated to Calgary’s players, and in hopes a little legendary luck rubs off on the new restaurant.
